From Brill’s Bible of Building Plans comes this recipe for Buttermilk Fudge. 2 cups white sugar, 3/4 cup buttermilk, ½ cup white corn syrup. Cook these 3 ingredients together until a few drops will form a soft ball when dropped into cold water. Set off fire and cool. When candy is slightly warm beat it until it begins to get creamy. Then pour into buttered platter or pour on damp cloth and shape into a ball. When firm, cut in small pieces. Now on a personal note aside from Brill’s original recipe, these days fudge is more properly made in an 8” or 9” square baking dish lined with parchment, with the liner lightly buttered. Put sweetened condensed milk, two 14oz cans of it, into a heavy-bottomed pot, and over low heat melt 3 cups of chocolate chips or peanut butter chips and ¼ cup of unsalted butter in the condensed milk, stirring often, till the mixture is smooth and creamy. Then stir in 2 teaspoons vanilla, and if you wish you can stir in 1 cup of chopped walnuts or coconut for crunch. Chill to set, and enjoy.
