Lentil Sloppy Joe<\/span><\/strong><\/span><\/p>\n

\u00bd pound lentils
\n<\/span><\/strong>1 large yellow onion
\n<\/span><\/strong>1 small green pepper (optional)
\n<\/span><\/strong>1 cup catsup
\n<\/span><\/strong>Sugar or sweetener to taste
\n<\/span><\/strong>2 Tb Oil
\n<\/span><\/strong>Flour tortillas, large or small<\/span><\/strong><\/p>\n

Boil the lentils until very soft and drain well, about 30-40 minutes. Chop the onion coarsely and mince the green pepper if you’re using one and fry both gently on a medium heat in the oil until the onion is transparent. Add the catsup and sugar or sweetener. Stir in the lentils once it’s done. Serve in tortillas, small ones just folded in half or large ones wrapped like a burrito. Do not over-stuff the tortillas. You may want to fold in additional raw chopped onion and your choice of hot sauce.<\/span><\/strong><\/p>\n
