(vary it to suit yourself, this isn’t written in stone):
1 Daikon, peeled & sliced (optional) – 2 or more Carrots, sliced
1 teaspoon Salt – 1/2 cup White Vinegar
1 cup Sugar – 1 cup Water – 4 fresh Jalapeños sliced thin
Put carrot, radish and jalapeño in a bowl. Heat the liquid to a boil, pour over the vegetables, chill.
