ASIAN NOODLES
(AUTHENTIC, BELIEVE IT OR NOT, JUST NOT “GOURMET”!)
The cheap pack of ramen is a County Fair staple where I live, and a refuge the world over for poor college students, starving actors, and carnies (among others). But it’s not far from the way noodles are served in “authentic” Asian restaurants here (or, for that matter, in Asia). Eat the noodles with or without broth, but add something fresh and “just the way you like it.” Here are some ideas: Vietnamese Pho is served with a plate of fresh bean sprouts, basil, sliced fresh jalapeno (or other chili), and a wedge of lime, all to mix in to your own taste – and that’s not all! The hearty bowl of noodle soup also gets a dash of “this and that” from the ever-present tabletop condiments: Sriracha chili sauce, chili paste with garlic, and sweet dark hoisin sauce. Again, mix ’em in to your taste. Elsewhere they serve simple noodles with a peanut sauce – mix any proportions of peanut butter, soy sauce, sugar, balsamic vinegar, garlic powder, Sriracha, chili paste, and sesame oil.
